Well, I don't know if you will find all of these recommendations interesting, but try Cowboy Bebop, Monster (its a longer series but more "realistic"), Ergo Proxy and try the movies Jin Roh, Paprika, Princess Mononoke, Nausicaa of the valley of the wind and Porco Rosso. Hopefully you find one of those to be interesting.

Well, you should really watch Fullmetal Alchemist: Brotherhood. It's FMA, but following the manga's story line which is much better. If you liked FMA, you will definitely like FMA: Brotherhood. Oh, and try Hellsing Ultimate too since you liked Hellsing. It's basically a series of Hellsing OVAs that follow the manga's plot, though there's only a new one once in a blue moon, and there have only been 8 episodes released so far since February of 2006.

As for other stuff:
As much as I hate Bleach these days, I can't help but recommend it it if you liked those anime. Stop once you get to the Bount arc though, the quality of the series begins its long decline at that point. If you do decide to continue on, at least skip all the filler arcs.

Also, try the Rurouni Kenshin anime, and the Rurouni Kenshin OVA 'Tsuiokuhen' ('Trust & Betrayal' in English). There's another Rurouni Kenshin OVA called 'Seisouhen' ('Reflection' in English), but I haven't seen it so I don't know if it's good or not.

Have you seen the Matrix films? You might like the Animatrix if you have.

Have you considered Full Metal Panic and FMP Fumoffu? They are both really good comedy/military action shows, though Fumoffu is more of the comedy type. It is very well executed comedy though.

I watched a few episodes of full metal alchemist brotherhood and I didn't like it as much as full metal alchemist. It was like watching the remake of a movie where the writers only slightly changed the story line.

My opinion about hellsing ultimate is that it was way to over the top, cartoony, and unrealistic.

I hate bleach! I cringe every time I try to remember one of the filler story arcs they added into the series. Its like they added all sorts of worthless filler bullshit that had nothing to do with the main story line just so they could have a new episodes every week.

I did sort of like rurouni kenshin and will check out the titles you mentioned

Brotherhood isn't a remake, it exists as a completely separate work to the original FMA anime.

Since you seem to be unaware, I'll explain why both versions exist. The original FMA anime was aired while the manga was still incomplete, and as such the studio making it had to create their own storyline which didn't follow the manga's (they even went as far as changing the names and roles of certain key characters). Brotherhood was released after the completion of the manga and followed the storyline that FMA should've had from the beginning, and as a result it was much better than the original FMA.

So you see, Brotherhood isn't a remake or anything of the sort - it's a manga adaptation.
